My larb Thai Chicken recipe is a simple and delicious Thai recipe! Larb is a Thai meat salad, consisting of cilantro, crushed red pepper, lime or lemon juice and fish sauce. Larb meat can be chopped, minced or sliced. It is also a popular Lao dish. Larb Thai is very diverse because you can make it using chicken, beef, pork or duck.

My mom enjoys making chicken and pork larb. I especially love her larb recipes. Her larb is so yummy because she adds roasted rice into the dish. In her pork larb , she includes both roasted rice and boiled pork skin. SO YUMMM! My larb Thai recipe will focus on using chicken breast, but feel free to use a meat of your choice as a substitute.

Bake the chicken breast at 350 degrees F for 30 minutes. As the chicken is baking, roast the raw Jasmine rice in a pan on medium-high heat. Turn off the heat once the rice turns golden brown. It takes about 3 minutes to roast.

Next, grind the roasted rice in a mortar. If you don’t have a mortar and pestle, use a food processor to grind the rice grains.

Pluck a 1/2 cup of cilantro leaves and chop.

After baking the chicken and cooling it down, shred the chicken.
In a plate or bowl, mix together shredded chicken, cilantro leaves, crushed red pepper, and roasted rice. Add a 1/4 tablespoon of fish sauce and 2 tablespoons of lime or lemon juice. Use your hands or a spoon to mix everything together. All done!

Ingredients

  • 1 chicken breast
  • 1 tsp crushed red pepper
  • 1/2 cup cilantro leaves
  • 1 tsp raw Jasmine rice
  • 1/4 tbsp fish sauce
  • 2 tbsp lime or lemon juice
