My larb Thai Chicken recipe is a simple and delicious Thai recipe! Larb is a Thai meat salad, consisting of cilantro, crushed red pepper, lime or lemon juice and fish sauce. Larb meat can be chopped, minced or sliced.

Ingredients
  • 1 chicken breast
  • 1 tsp crushed red pepper
  • 1/2 cup cilantro leaves
  • 1 tsp raw Jasmine rice
  • 1/4 tbsp fish sauce
  • 2 tbsp lime or lemon juice
Instructions
  1. Bake chicken breast at 350 degrees F for 30 minutes.

  2. As the chicken is baking, roast the raw Jasmine rice in a pan on medium-high heat for 3 minutes or until golden brown. Grind roasted Jasmine rice in a mortar or food processor.

  3. Pluck a 1/2 cup of cilantro leaves and chop.

  4. After the chicken is cooked, let it cool and shred the chicken.

  5. In a plate or bowl, mix together shredded chicken, cilantro leaves, crushed red pepper, and roasted rice. Next, add the fish sauce sand lime juice. Use your hands or a spoon to mix everything together.
