Pad Mama

Mama is a popular instant noodle brand in Thailand. It comes in different flavors like Tom Yum, Yen Ta Fo, Green Curry, Pho, etc. My favorite has to be the Tom Yum Mama noodles. Thai people like Mama so much that there is even a restaurant in Thailand called Yum Saap, which serves various dishes using Mama noodles. There are so many ways to cook Mama noodles and one way is to stir fry it, hence this recipe, Pad Mama. In Thai, “Pad” means to stir-fry. So Pad Mama translates to stir-fry Mama noodles. There is no right or wrong way to make Pad Mama and there are different variations of the dish.

I enjoy making this dish because it is quick to make and the ingredients used to make the dish is inexpensive. This recipe is great for those individuals who are on a budget or those who have busy schedules.

Since my recipe is a meatless Pad Mama, feel free to add your favorite meat to the dish. Also for this recipe, it’s not required to use the Mama brand, so use any kind of instant noodles that is available at your local store like Maruchan instant noodles.

Pad Mama

In Thai, Pad Mama translates to stir-fry Mama noodles.  Pad Mama because is quick to make and the ingredients used to make the dish is inexpensive. This recipe is great for those individuals who are on a budget or those who have busy schedules.

Ingredients

  • 1 tsp cooking oil
  • 1/2 carrot
  • 1/2 cup broccoli
  • 2 tbsp soy sauce
  • 3/4 tbsp oyster sauce
  • 1/4 tbsp sugar
  • 1/2 tsp sesame oil
  • 1/4 tsp dark soy sauce
  • 2 instant noodle packs

Instructions

  1. In a bowl, add the soy sauce, oyster sauce, sugar, sesame oil, and dark soy sauce together

  2. Boil noodles for 3 mins and drain

  3. Cut broccoli and carrots

  4. Heat pan to medium heat and add cooking oil

  5. Then, add the carrots and broccoli into the pan. Stir fry for 2 to 4 mins. Next, add the noodles and stir fry everything together. 

  6. Add noodles into the pan and the sauce mixture. Cook for an additional 5 mins.

  7. Serve and add some dumplings to eat as an appetizer with your Pad Mama
