Baked Frito Pie

Baked Frito Pie

This baked Frito pie dish is so easy to make because it doesn’t involve much cooking. All you need is to put the ingredients together and bake! The first time I had Frito pie was during my grad school years. I was at the annual Anthropology potluck Christmas party. There were so many diverse dishes, and one of them was Frito pie. For those of you who aren’t familiar with the dish, it consists of chili, cheese and corn chips. It is a popular dish from the Southern, Southwestern and Midwestern United States. My Anthropology professor from the American Southwest prepared the baked Frito pie, and I loved it!

I was delighted by the baked Frito pie dish that I kept going back for more. How did I not know about this sooner? I loved the sogginess and softness of the corn chips, and the combination of the cheese and chili was irresistibly delicious. I could not leave the party without asking him how he made it. That day I left with a new foodie recipe and more yummy food ideas to prepare in my own kitchen.

Directions

In Hawaii, there is a local restaurant called Zippys that sells amazing chili so I bought a small serving of chili, approximately 10 ounces, and used it for my baked Frito pie creation.  If there is a local restaurant that sells great tasting chili, please use that for the dish. If not, prepared canned chili or frozen chili will suffice.

Take a loaf dish and start by layering the Fritos, cheese and chili. Begin by adding the Fritos chips followed by the chili and cheese. Repeat until all the chili and chips are gone and top it off with cheese.
