Lotus Root Soup

I recreated one of my favorite soups I enjoyed as a kid, and that is lotus root soup! The soup tastes similar to the lotus root soup served at Chinese restaurants during their lunch special hours. So I’m super excited that my lotus root soup recipe is as good as the ones found at Chinese restaurants.

The flavor of the pork bones, meat, ginger and lotus root meld together for a bold and savory taste. It is such a warm and comforting dish!

Lotus root has many health benefits and contains your essential vitamins. It is also a great source of protein and dietary fiber! Make sure to choose fresh lotus root for the recipe. Based on my personal experience, frozen lotus is not the best option because the flavor is lost after freezing.

I have also cooked my lotus root recipe in a slower cooker. When I have a busy schedule, I will set it and leave in my crock pot. 8 hours later, I come home to yummy lotus root soup, and dinner is ready. It taste so much more delicious in a crock pot. If you plan to cook it in a crock pot, boil the pork bones first. Then, place all the ingredients and pork bones in the pot and cook on low for 8 hours. If you have a crock pot, I recommend cooking this lotus root soup recipe in a slow cooker.

DIRECTIONS

There is a few ingredients to my lotus root soup, which makes cooking it so simple. The ingredients are Knorr chicken bouillon cube, pork bones, ginger, carrot and lotus root.

Slice the lotus root crosswise into 1/4 inch slices. Peel ginger and cut two 1/4 inches slices of ginger crosswise.

In a pot, add pork bones, Knorr chicken cube, ginger, carrots, lotus root, and water. Bring to boil and let it boil for 7 minutes. After 7 minutes of boiling, simmer for 2 hours. Skim off fat and oil from the top of the soup.

Ingredients

  • 4 cups water
  • 1.5 pounds pork bones
  • 2 1/4 inch ginger slices
  • 1 carrot sliced
  • 1 cube Knorr chicken bouillon cube
  • 1/4 pound lotus root

Instructions

  1. Slice the lotus root crosswise into 1/4 inch slices. Peel ginger and cut two 1/4 inches slices of ginger. Cut carrot into slices

  2. In a pot, add pork bones, Knorr Chicken cube, ginger, carrots, lotus root, and water. Bring to boil and let it boil for 7 minutes. After 7 minutes of boiling, simmer for 2 hours. Skim off fat and oil from the top of the soup.

  3. After 2 hours of simmering, your lotus root soup is ready

Recipe Notes

If you plan to cook it in a crock pot, boil the pork bones first. Then, place all the ingredients and pork bones in the pot and cook on low for 8 hours.
