Lotus root soup is such a warm and comforting dish! The flavor of the pork bones, meat, ginger and lotus root meld together for a bold and savory taste.

Ingredients
  • 4 cups water
  • 1.5 pounds pork bones
  • 2 1/4 inch ginger slices
  • 1 carrot sliced
  • 1 cube Knorr chicken bouillon cube
  • 1/4 pound lotus root
Instructions
  1. Slice the lotus root crosswise into 1/4 inch slices. Peel ginger and cut two 1/4 inches slices of ginger. Cut carrot into slices

  2. In a pot, add pork bones, Knorr Chicken cube, ginger, carrots, lotus root, and water. Bring to boil and let it boil for 7 minutes. After 7 minutes of boiling, simmer for 2 hours. Skim off fat and oil from the top of the soup.

  3. After 2 hours of simmering, your lotus root soup is ready

Recipe Notes

If you plan to cook it in a crock pot, boil the pork bones first. Then, place all the ingredients and pork bones in the pot and cook on low for 8 hours.
