Marsala Beef Stew

Ingredients
  • 3 cups beef stock
  • 3 small potatoes, cut in quarters
  • 1 tomato, cut in quarters
  • 2 cloves garlic, minced
  • 1/2 cup Marsala cooking wine
  • 1.5 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 pound beef stew cuts
  • 1/2 onion sliced
  • 1 tbsp olive oil
  • 2 tbsp flour
Instructions
  1. In a bowl, coat the beef in flour 

  2. Heat a pan to medium heat, add olive oil, garlic, onions, thyme, and rosemary. Cook until the onions are tender. Add the beef and sear all sides. Once the beef has browned, add the Marsala wine

  3. Transfer the ingredients from the pan into the slow cooker

  4. Add the broth, potatoes and tomatoes into the crock pot and cook on low for 8 hours. During the last hour of cooking, taste the soup to see if salt and pepper is needed

  5. Serve and enjoy!
