Hawaiian Coconut Pudding (Haupia) is a Hawaiian dessert almost similar to a gelatin. It consists of 4 simple ingredients: water, sugar, cornstarch and coconut milk.
In a small pot, combine coconut milk and sugar. Stir together and bring to a boil
As you wait for the coconut milk to boil, mix the cornstarch with water and stir until the corn starch has dissolved in the water
Once the coconut milk has boiled, lower the heat and slowly stir in the corn starch
Keep stirring the mix until the the consistency is thick and creamy
Immediately pour into a small 8"x8" pan
Refrigerate the haupia. Cut the haupia into squares and serve!
