Pad prik king is a common dish found in Thai Restaurants in the U.S. It is a stir-fry dish consisting of red curry paste, green beans, lime leaves, and meat. In Thai, the word “king” in pad prik king translates to ginger; but interestingly enough, there is no ginger in the dish!!
Cut chicken thighs into bite size pieces.
Cut green beans 1/4 inch to 1/2 inch long. Next, cut lime leaves into thin strips using kitchen scissors. Remove center stem from the lime leaf.
On medium heat, add cooking oil into a pan. When the pan is hot, add the red curry paste. Next, add the sugar and fish sauce. Mix everything together.
Add the chicken to the pan and stir-fry the red curry paste into the chicken. Cook the chicken for about 5 minutes and add in the green beans and lime leaves. Stir-fry everything together. Cook the chicken completely through and your dish is done!
