My favorite Filipino dish would have to be Adobong Baboy (Pork Adobo). For Filipinos and non-Filipinos alike, many are familiar with adobo. It is a Filipino comfort food and possibly the national food for Filipinos.

Ingredients
  • 1 tsp cooking oil
  • 1 pound pork shoulder
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1 tsp peppercorn
  • 3 bay leaves
  • 5 garlic cloves minced
  • 1.5 cup water
Instructions
  1. Heat up a pan with a teaspoon of cooking oil and add the minced garlic. When the garlic becomes fragrant, add the pork. Cook the pork until it is browned.

  2. Once the meat is cooked, add the soy sauce, vinegar, bay leaves, 1/2 cup water and peppercorn. Bring to a boil and let it boil for 5 minutes. Do not stir the sauce. 

  3. After 5 minutes of boiling, set on low heat and let it simmer for 45 minutes. After the 15 and 30 minute mark of simmering, add 1/2 cup of water each time. Every so often, check to see if more water is needed to adjust the flavor to your liking. 

  4. Serve on a plate with warm rice! :D
